Blueberry Muffins





Ingredients :

Muffins

2 cups all-purpose flour
1 cup white sugar
1/4 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
2 eggs
2/3 cup Greek yogurt (I used 2% plain, Chobani Greek yogurt)
2 cups blueberries
2 tablespoons flour (for berries)

Topping

2/3 cup brown sugar
1/3 cup flour (or more)
1 teaspoon cinnamon
2 tablespoons butter, room temperature

Peach Pecan Muffins






Ingredients :

3/4 cup almond meal
3/4 cup cake flour
1/4 cup all-purpose flour
1 cup brown sugar
1/2 tsp salt
1 egg
1/2 tsp baking soda
3/4 tsp vanilla extract
1/2 cup sour cream or yogurt
2 TBSP canola oil
2 medium peaches, peeled, and diced
1/3 cup chopped pecans

Lemon Poppy Seed Muffins






Ingredients :

½ cup of Unsalted Butter, softened at room temperature
¾ cup of Plain Yogurt
½ cup of Granulated Sugar
2 Tsp of Baking Powder
½ tsp of Baking Soda
½ tsp of Salt
2 cups of All Purpose Flour
3 Tbsp of Poppy Seeds
1 Envelope of Vanillina or 1 tsp of Vanilla Extract
2 Eggs
Zest of 1 Large Lemon or 2 small lemons
Juice of One Lemon

For the Glaze

1 cup of Powdered Sugar
About 1 Tbsp of Lemon Juice

Shrimp Salad on Cucumber Slices






Ingredients :

3/4 lb cooked shrimp, peeled (weight after peeled)
2 celery stalks, chopped
1 tbsp red onion, chopped
2 tbsp light mayonnaise 
1 tbsp fat free Greek yogurt
All Purpose Seasoning
salt and fresh ground pepper
30 thin slices cucumber (about 1 large)
chopped chives for garnish

Mixed Fruit with Yogurt Topping






Ingredients :

2 cups  plain low-fat yogurt
1 8 ounce can crushed pineapple (juice pack)
2 teaspoons  vanilla
5 cups  mixed fruit (such as fresh or canned pineapple chunks, seedless 
grapes, sliced fresh strawberries, and/or blueberries)

Creamy Avocado Yogurt Dip






Ingredients :

1/2 cup plain fat-free Greek yogurt
2 ripe avocados, peeled and seeded
1 clove garlic, minced
3 tablespoons chopped fresh cilantro
1 tablespoon finely chopped seeded jalapeño pepper
2 tablespoons fresh lime juice
1/4 teaspoon ground cumin
Salt and ground black pepper, to taste
Pita chips, tortilla chips, cut up veggies-for serving

Directions :

1. Place the yogurt, avocados, garlic, cilantro, jalapeño, lime juice, and cumin in a blender or food processor. Mix until smooth. Season with salt and pepper, to taste.
2. Scrape dip into a serving bowl and serve with pita chips, tortilla chips, or cut up veggies.

Fruit And Yogurt Popsicles






Ingredients:

1 cup yogurt such as Stonyfield YoKids
1 cup either fresh or frozen fruit such as strawberries, blueberries, bananas or peaches
2 tablespoons honey or agave nectar
1 set of 6 popsicle molds (if you do not have a popsicle mold you can also use small paper cups, wooden sticks and aluminum foil)

Stuffed Baby Peppers with Yogurt and Honey






Ingredients :

20 small sweet peppers, such as baby bell peppers
1 cup plain low-fat yogurt
1 garlic clove, minced
Salt and freshly ground black pepper
10 kalamata olives, thinly sliced
2 small jalapeños, very thinly sliced crosswise
Honey for drizzling


Light a grill. Grill the peppers over moderately high heat, turning, until lightly charred and crisp-tender, 3 minutes. Peel off any charred parts and halve the peppers lengthwise. Cut out the cores and scrape the seeds. Arrange the peppers cut sides up on plates.
In a bowl, mix the yogurt with the garlic; season with salt and black pepper. Fill each pepper half with the yogurt. Scatter the olives and jalapeños on top. Drizzle each plate with 2 teaspoons of the honey and serve.

Red Curry Yogurt Chicken






Ingredients :

1 1/2 cups Greek Yogurt
2 tbsp Red Curry Paste
1 tsp Garlic Powder
1/2 lime, juiced
Salt, to taste
2 cups Panko Bread Crumbs
Red Pepper Flakes, to taste
2 lb Boneless, Skinless Chicken Breasts
Cilantro, for garnish
12 oz French Cut Green Beans
1 tbsp Extra Virgin Olive Oil
2 Red Peppers, sliced
2 Garlic Cloves, minced
Red Pepper Flakes, a dash
Salt, to taste
Cilantro, for garnish

Fresh Strawberry Yogurt Cake






Ingredients :

1 cup (2 sticks) butter, softened
2 cups sugar
3 eggs
3 Tb. lemon juice, divided
Zest of 1 lemon
2 ½ cups all-purpose flour, divided
½ tsp. baking soda
½ tsp. salt
8 oz. plain or vanilla, Greek yogurt
12 oz. fresh strawberries, diced
1 cup powdered sugar
