Lasagna Soup






Ingredients :

1 tablespoon oil
1 pound Italian sausage, casings removed
1 onion, diced
2 cloves garlic, chopped
1/2 teaspoon red pepper flakes
1/2 teaspoon fennel seeds, crushed
4 cups chicken broth or chicken stock
1 (28 ounce) can diced tomatoes
2 tablespoons tomato paste
1 teaspoon oregano
1 bay leaf
salt and pepper to taste
1/2 pound pasta
4 ounces ricotta
1/2 cup parmesan, grated
2 cup mozzarella, shredded
1 handful basil, chopped

Chilled Spicy Sesame Noodles with Shrimp






Ingredients :

For the Noodles:

1 lb. thin noodles, cooked and rinsed (I used angel hair pasta)
1 tablespoon vegetable oil
3 cloves garlic, minced
3 tablespoons sesame oil
2 tablespoons soy sauce
2 tablespoons rice wine vinegar
2 tablespoons granulated sugar
1 tablespoon hot chili paste
1 teaspoon mirin (optional)
3/4 teaspoon kosher salt
10 scallions, thinly sliced
3-4 carrots, grated
squeeze of lemon

Vodka Cream Pasta










Ingredients :

1 tbsp extra virgin olive oil, once around the pan in a slow stream
1 tbsp butter
2 cloves garlic, minced
2 shallots, minced
1 cup vodka
1 cup chicken stock
1 32 oz can crushed tomatoes
Coarse salt and pepper
16 oz pasta, such as penne rigate
1/2 cup heavy cream
20 leaves fresh basil, shredded or torn
Crusty bread, for passing

Pasta Primavera





Ingredients:

8 oz Tagliatelle Pasta, or any kind of thick ribbon shape pasta

1 Bunch of Asparagus, washed, trimmed and cut into 1 inch pieces

1 Large Carrot, peeled and grated

1 Large Zucchini, trimmed and cut into half moon pieces or a handful of baby zucchini, halved

1 cup of Fresh Shelled Baby Peas or frozen but defrosted peas if you cant find fresh

5 Shallots, sliced

3 Cloves of Garlic, minced

2 Tbsp of Olive Oil

1 Tbsp of All Purpose Flour

½ cup of White Wine

1 ½ cups of Vegetable Stock

Zest and Juice of One Small Lemon

2 Tbsp of Parsley, chopped

1 Tbsp of Fresh Thyme, chopped

Salt and Pepper to taste

Avocado Mac and Cheese





Ingredients:

10 ounces dry elbow macaroni

2 cloves garlic, minced

2 avocados, peeled and pitted

2 tablespoons fresh lime juice

1/3 cup chopped fresh cilantro

Salt and pepper, to taste

2 tablespoons butter

2 tablespoons all-purpose flour

1 cup milk

2 cups shredded Pepper Jack cheese

Salt and pepper, to taste

Fresh avocado chunks, for garnish, if desired
